Tomato & Garlic Bruschetta

Oh Bruschetta...how we love thee so, and all the various forms you come in! Bruschetta is one of those dishes that's ridiculously easy to make and so satisfying every time. Especially during the summer when tomatoes are at their peak! With some fresh bread and a glass of wine, you're ready for a deliciously quick aperitivo! 

This recipe is from our lovely Villa hosts in Castiglion Fiorentino, Famiglia Buccelletti! 

Tomato & Garlic Bruschetta Recipe:


Ingredients:

  • 1/4 cup good olive oil
  • 3 Tb fresh chopped basil
  • 3-4 cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium diced tomatoes
  • 2 Tb finely grated Parmesan cheese
  • 1 loaf (about 1 lb) unsliced French bread

Recipe:

  1. Gather and chop all your ingredients!
  2. In a large bowl, combine the oil, basil, garlic and spices. 
  3. Add tomatoes and mix thoroughly. Add the cheese and refrigerate for an hour. 
  4. While tomatoes are chilling, slice the bread into roughly 1/2" slices and drizzle with olive oil on a baking sheet. 
  5. Toast under broiler until lightly toasted. For an extra kick, scrape the bread with a clove of garlic! 
  6. Let tomato mixture come to room temperature and top the slices of bread with a hearty scoop!
